Enhanced Growth of Lactobacilli in Soymilk upon Immobilization on Agrowastes | Monday, March 8, 2010 6:00 PM
The objective of this study was to evaluate the effects of agrowastes from durian (Durio zibethinus), cempedak (Artocarpus champeden), and mangosteen (Garcinia mangostana) as immobilizers for lactobacilli grown in soymilk. Rinds from the agrowastes were separated from the skin, dried, and ground (150 [mu]m) to form powders and used as immobilizers. Scanning electron microscopy revealed that lactobacilli cells were attached and bound to the surface of the immobilizers. Immobilized cells of Lactobacillus acidophilus FTDC 1331, L. acidophilus FTDC 2631, L. acidophilus FTDC 2333, L. acidophilus FTDC 1733, and L. bulgaricus FTCC 0411 were inoculated into soymilk, stored at room temperature (25 °C) and growth properties were evaluated over 168 h. Immunizing Effects of Cocultures of H22 Hepatocarcinoma Cells and Cartilage Polysaccharide on Murine H22 Hepatocarcinoma | Sunday, March 7, 2010 6:00 PM
Hepatocarcinoma is a malignant cancer, which is threatening human lives. In order to disclose the immunizing effects of the cells and cartilage polysaccharide (CHCP) on liver cancer, murine H22 hepatocarcinoma model was set up. The survival time, life span, and survival rate of the CHCP group were better than model group or other groups which was immunized with cartilage short-chain polysaccharide (CPS) only or H22 cell lysate only. A series of experiments were proceeded and the results confirmed that the humoral immunity and cellular immunity were strengthened. Structural changes and functional properties of threadfin bream (Nemipterus sp.) sarcoplasmic proteins (TB-SP) subjected to various pH conditions (pH 3, 5, 6.3, 9, and 12) after subsequent pH readjustment to pH 7 were investigated. Fourier transform infrared spectroscopy revealed the loss of [alpha]-helical and [beta]-sheet structures of TB-SP after being subjected to pH 3 or pH 12 treatments. The extent of structural and conformational changes of TB-SP subjected to pH 3 was greater than alkaline pHs (pH 9, 12) and pH 5, respectively. The water holding capacity of lyophilized TB-SP treated at pH 3 and pH 12 increased about 6.5- and 5.4-fold, respectively, as compared to the crude counterpart. Identification of Natural Antimicrobial Substances in Red Muscadine Juice against Cronobacter sakazakii | Sunday, March 7, 2010 6:00 PM
Red muscadine (Vitis rotundifolia Michx.) juices with natural organic, phenolic acids and polyphenol compounds were tested against Cronobacter sakazakii. The concentration of total phenolic compounds of commercial baby juices ranged from 176.7 to 347.7 mg/mL. Commercial baby juices showed poor antimicrobial activity, reducing less than 1-log of C. sakazakii in juice samples for 2 h at 37 °C. Red muscadine juices, regardless of processing methods (filtration, pasteurization, and sterilization), achieved a 6-log reduction of C. sakazakii in the same time period (2 h).
